Marzipan is traditionally used on fruit cakes and makes a nice addition to sponge cakes.
Icing comes in numerous colours: knead blocks of fondant icing together to form a soft ball then roll out. Create a large circle two inches bigger than your cake then place on top. Use Smoothers to achieve a flawless finish.
